This recipe came about completely by accident. When making traditional pancakes we typically avoid using any sort of baking spray, oil, or butter in the skillet. The reason being, exactly why we used it here today. Essentially, if enough oil is used, it will fry the pancake which leaves it tasting similar to a donut but with pancake batter. As a result you get just that, a delicious hybrid of a pancake & donut. Top it with some icing & sprinkles & enjoy the breakfast of your dreams. What more could you ask for?! Food hybrids have been taking the world by storm for years now & this one is that latest & greatest to hit the scene. After all, what could be a better breakfast than not one, but two of your favorite treats. Perfect for any sort of celebration: birthdays, graduation, etc. or just a regular Monday morning to help you get through the week. Either way, it's sure to be better than your typical on-the-go breakfast. Feel free to make these the night before & store them in a sealed container or make them the morning of if you have time. They take only about 30 minutes to make & are well worth it! We love topping them with chocolate chips, sprinkles, & even fresh fruit!
- for pancakes:
- 1½ cups all purpose flour
- 1 tbsp baking powder
- 2 tbsp granulated sugar
- 1 tsp vanilla extract
- 1 egg
- 1½ cups milk
- 3 tbsp unsalted butter, melted
- for cooking:
- baking spray
- In large mixing bowl combine all ingredients. Whisk together until batter is smooth. Pour batter into Ziploc bag & seal shut. Cut a very small corner of the bag off.
- Spray medium skillet with baking spray. Place skillet over medium heat. Carefully pipe batter into a donut shape on the skillet. Let cook until top is bubbling. Lift the pancake with a spatula, respray surface, flip, & cook until both sides are golden brown. Repeat until all batter has been used. Serve & enjoy!
